CHOCOLATE CUPCAKES

Ingredients:

For the cupcakes:

1 3/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

3/4 cup unsweetened cocoa powder

2 cups granulated sugar

2 large eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the chocolate frosting:

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

1/2 cup unsweetened cocoa powder

1/2 cup milk

1 teaspoon vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.

In a large mixing bowl, sift together the flour, baking powder, baking soda, and cocoa powder. Add the sugar and mix well.

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until the batter is smooth and well combined.

Gradually add the boiling water to the batter, mixing continuously. The batter will be thin, but that’s normal.

Pour the batter into the prepared cupcake liners, filling each about two-thirds full.

Bake the cupcakes in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and allow them to cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

While the cupcakes are cooling, prepare the chocolate frosting. In a large mixing bowl, cream the softened butter until light and fluffy.

Gradually add the powdered sugar and cocoa powder to the butter, mixing well after each addition.

Pour in the milk and vanilla extract, and continue to beat the mixture until smooth and creamy.

Once the cupcakes have cooled completely, frost them generously with the chocolate frosting using a spatula or a piping bag.

Optionally, you can garnish the cupcakes with chocolate shavings, sprinkles, or any desired decorations.
