They are the perfect appetizer for any event or gathering. We can eat them anytime. The sauce we made goes great with them. These come together really quickly and are always a hit! These are very versatile and you can add heat if you like. Check out the SWAPS below for ideas on how to switch these up.

  • Pork sausage
  • Bisquick
  • Mexican Cheese
  • Cream cheese, softened
  • Green chiles
  • Cumin
  • Smoked paprika
  • Salsa Verde Dipping Sauce Ingredients needed:
  • Sour cream
  • Salsa Verde

If you want these to have some heat, then get the hot green chilis and use hot Jimmy Dean breakfast sausage. Love really hot, so add some diced jalapenos. We like them without the heat so we use the mild green chilis. You can also use Greek yogurt in the place of the sour cream in the dipping sauce. If you don’t want to make the dipping sauce, you can always dip these in ranch dressing or salsa.

The longest part of the prep work in these Mexican sausage balls is letting the cream cheese soften.

Step 1
Preheat oven to 350 degrees. Mix all ingredients together and shape into walnut-sized balls.

Step 2
Place on a greased baking sheet and cook for 25-30 minutes. You can eat these without sauce or dip them in the salsa verde dipping sauce. Mix sauce ingredients together and serve.

Mexican Sausage Balls

When hosting a gathering, you can make 2-3 versions of sausage balls. We like to start with the base of sausage and Bisquick and then divide up and add the other ingredients to make original, Mexican and pimento.

If you have followed our site for any amount of time you know this Sausage Cream Cheese Dip is our favorite. Our homemade Pimento Cheese is a great appetizer that can be used to make little sandwiches or dip with delicious crackers or vegetables.

Can you make these in advance?

Yes, you can make the mixture, make the balls and put them on a baking sheet in the fridge. Bake the the next day.

Can I make these gluten-free?

Yes, use gluten-free bisquick!

I store these in an airtight container and reheat in the microwave. We do love them cold, though, right out of the fridge.
