Old Fashioned Goulash

Old Fashioned Goulash is a timeless and beloved dish that combines tender beef, savory vegetables, and flavorful seasonings. This hearty one-pot meal is perfect for chilly evenings and will transport you to a place of warmth and comfort. In this recipe, we’ll guide you through creating a delicious and satisfying Old Fashioned Goulash that will surely become a family favorite.

Ingredients:

1.5 pounds beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 cups diced tomatoes (canned or fresh)

2 cups beef broth

2 tablespoons tomato paste

2 teaspoons paprika

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups elbow macaroni or other small pasta

Chopped fresh parsley, for garnish (optional)

Instructions:

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.

In the same pot, add the diced onion, minced garlic, and diced bell peppers. Sauté for about 5 minutes until the vegetables have softened.

Return the browned beef stew meat to the pot. Add the diced tomatoes, beef broth, tomato paste, paprika, dried oregano, dried basil, salt, and black pepper. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together. Stir occasionally.

After the goulash has simmered, add the elbow macaroni or other small pasta to the pot. Stir well to incorporate the pasta into the mixture.

Cover the pot again and simmer for an additional 10-12 minutes, or until the pasta is cooked to your desired tenderness, stirring occasionally.

Remove the pot from the heat. Let the goulash sit for a few minutes to thicken before serving.

Garnish with chopped fresh parsley, if desired, before serving.

Serve the Old Fashioned Goulash hot, allowing everyone to enjoy the comforting flavors and tender beef alongside the flavorful vegetables and pasta.
