Pineapple Dream Dessert Recipe

For the Pineapple Layer:

  • 1 can (20 ounces) crushed pineapple, drained well
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 tub (8 ounces) whipped topping, thawed
  • 1/2 cup chopped pecans

For the Crust:

  • Graham crackers (amount as needed to cover the base of the dish)
  • Melted butter (quantity sufficient to moisten the graham crackers)

Preparing the Crust:

  1. Prepare the Base: Start by crushing enough graham crackers to cover the base of a 9″ x 13″ baking dish. The amount of graham crackers needed will vary depending on the size of the crackers and the thickness of the crust you prefer.
  2. Mix with Butter: In a separate bowl, mix the crushed graham crackers with melted butter. The butter should be enough to moisten the crumbs but not make them overly greasy. The mixture should resemble wet sand.
  3. Form the Crust: Press the graham cracker mixture evenly into the bottom of the 9″ x 13″ baking dish, forming a firm and even crust. Set aside.

Preparing the Pineapple Layer:

  1. Combine Pineapple and Pudding: In a mixing bowl, combine the well-drained crushed pineapple with the instant vanilla pudding mix. Stir until the two are well blended. The mixture should be thick and homogeneous.
  2. Add Whipped Topping: Add the thawed whipped topping to the pineapple and pudding mixture. Gently mix until well combined, ensuring that the mixture remains light and fluffy.
  3. Fold in Pecans: Carefully fold in the chopped pecans, distributing them evenly throughout the mixture.

Assembling the Dessert:

  1. Spread Pineapple Mixture: Gently spread the pineapple mixture over the prepared graham cracker crust in the baking dish. Spread it evenly, taking care not to disturb the crust.
  2. Refrigerate: Cover the baking dish with plastic wrap or a lid. Refrigerate the dessert for at least 2 hours, or until firm. This chilling time allows the flavors to meld together and the dessert to set properly.

  1. Slice and Serve: Once chilled and set, slice the Pineapple Dream into squares or rectangles. Serve chilled.
  2. Optional Garnishes: If desired, you can garnish the dessert with additional whipped topping, chopped pecans, or even a sprinkle of graham cracker crumbs before serving.

This Pineapple Dream dessert is a wonderfully refreshing and creamy treat that’s perfect for warm weather gatherings, potlucks, or as a sweet finish to a meal. Its combination of fruity, nutty, and creamy flavors, paired with the crunch of the graham cracker crust, makes it a crowd-pleaser. Enjoy your delicious homemade dessert!
